Cooking Cooking Resource

Question: I'm a vegetarian and want to start cooking. can you recommend a good vegie cookbook?

There's so many different books out there its hard to choose which one would suit me best. Am looking for something that gives straight forward/ easy recipes. I'm not a very good cook but want to start trying.

They do not make cookbooks out of vegetables.
